Aloo sabzi (potato curry)


Potatoes are very versatile and can be cooked in so many different ways, I love making aloo sabzi as its quick, spicy and so easy to make. This recipe is often eaten for breakfast with poori's (fried bread) but can be eaten with naan or chapatti's any time of the day.   




Ingredients

Potatoes (1lb cubed)
Oil
Chilli Powder 
1 Green chilli chopped
Salt
1 tsp Fenugreek seeds (methi dana)
1 tsp Onion seeds (kalongi)
1 tsp Cumin seeds (zeera)
6 Curry leaves 
3 Whole red chilli 
2 Garlic cloves chopped 
2 tblsp red lentils 

Method 

Peel and cut the potatoes into cubes and put in a pan cover with water, add the lentils and boil till almost tender. Remove from the heat and set aside. In a small pan or frying pan add oil, chopped garlic, fenugreek seeds, onion seeds, cumin seeds, whole red chilli, curry leaves and fry for a 1 minute and add the chilli powder. Remove from the heat and add a splash of water to cool the pan down. 

Now add the spices from the pan to the pan with the potatoes, add the salt and simmer till the liquid is thick in consistency. Add the chopped green chilli and some fresh coriander leaves for a garnish and eat with naan bread or chapati
