Baked breakfast or brunch


I saw this recipe on the internet and have tweaked it a little added some more ingredients and its absolutely delicious and so easy to make. No oil is needed to make this breakfast so its healthy too !

Ingredients

4 / 6 eggs
1 bag of Hash browns 
Sausages (other meats can be used)  - for a vegetarian option you can leave the meat out  
Spring onions (small handful)
1 red onion chopped 
Grated cheese
Salt & black pepper 
Red chilli flakes (optional)
Tomato ketchup 
Brown sauce 




A shallow oven proof dish is needed for this tray bake, first place the hash browns in the tray and place under the grill keep the grill on medium and after 10 minutes remove from the grill and with a serving spoon flatten the hash browns. Add the chopped red onion salt and black pepper and if you are using chilli flakes add them too and place back under the grill for 5 minutes. 

Take the tray out and add the sliced sausages and place back in the grill leave till the sausages are sizzling, take the tray back out and make some holes in the mixture and gently break the eggs into the holes and place back in the grill. As soon as the eggs start setting take the tray back out sprinkle the sauces and add the cheese and the chopped spring onion and place back in the grill for a few more minutes. 

Spoon out the portions and enjoy this baked breakfast its filling and warming and perfect for a winter weekend.
