Broccoli & Celery Soup

This quick, easy and utterly delicious soup is a variation of Jamie Oliver's Broccoli & Celery soup recipe. I am soup novice but found this so easy to make that I had to share it with you all. It takes 20 minutes to make with 5 minute prep time.




You will need:

400g Broccoli
3 sticks of Celery - chopped
few mint leaves
2 cloves of garlic  - chopped
1 tbsp. of oil
Salt / Black Pepper
Some chilli flakes (optional)
3 tbsp. red lentils
1 litre of hot water


Put the oil in a pan, chop the garlic cloves and add them to the oil fry for a few seconds and add the celery fry for a few minutes add the rest of the ingredients and cook for 10/15 minutes on a medium heat. Blitz in a blender and enjoy.
