Chicken Pasta


Pasta is the ultimate comfort food, its warm and filling and if you add cheese absolutely delicious. Its in the top 5 of my favorite foods and I have quite a few recipes which I will share with you. This is one of my favorite recipes and was given to me by a good friend. 


The pasta sauce can be made in advance and frozen great if you make a big batch and want to have the sauce ready for another meal to save time. The recipe below makes enough for 6 people. 







Ingredients


1 Kg Chicken mince
One large onion chopped
600 g pasta
500 g Tomatoes (blended)
Mixed Herbs 1 tbsp
Red Chili flakes  - to taste
Black pepper 1 tsp
Garlic - 8 cloves crushed or you can garlic powder 1 heaped tbsp
Salt - to taste
Grated cheese 
Oil 

White sauce

3 tbsp flour
Butter
Milk


Place oil in place and add onions lightly fry then add the chicken mince and fry well till all the water has dried. Now add the chili flakes, salt, mixed herbs, garlic and tomatoes add some water and cook on a low heat till the sauce reduces but make sure that there is still sauce in the pan. Check and adjust the salt or chili if needed.

In a separate pan add butter and flour and mix till the flour is light brown, remove from the heat and cool the mixture. Add the milk and mix with a whisk return back to the heat and keep stirring with the whisk till the sauce is ready. 

Turn the oven on 180 degrees.

Boil the pasta and drain, place pasta in a bowl and add some chili flakes and olive oil and mix. Layer the pasta with the chicken mixture and the white sauce in a oven proof dish and top with grated cheese. Sprinkle with mixed herbs and bake for 30 mins.

This pasta dish is great with crusty garlic bread and a big salad.
