Aloo Palak (Spinach & Potato)


This is a quick and easy recipe of my mum's  for a very popular vegetarian dish. It can be eaten as as a main or a side dish. As long as you have a few potatoes and some frozen or tinned spinach it takes around 20 minutes to make.

You can use fresh spinach however it will take slightly longer to cook.




Ingredients

Serves 2 as a main or 4 as a side dish

4 medium sized potatoes cut in small pieces
1 small tin of spinach 
Oil
2 cloves of garlic - chopped
Cumin seeds (1tsp)
onion seeds (optional )
Dried chilli flakes or whole dried red chillies (to taste)
Salt
Turmeric (1/2 tsp)
1 Green Chilli finely chopped
Half a fresh lemon

In a pan add oil once heated add chopped garlic, wait a few seconds and add the cumin and onion seeds once they start sizzling add the dried chillies if you are adding the whole red chillies just break them up. After a few seconds add the turmeric fry for a few seconds and add the potatoes. 

Fry the potatoes for a few minutes and add the spinach, salt and chopped green chilli. cover and cook till the potatoes are done squeeze the lemon juice on top and serve. 

Spinach tends to soak up oil so you may want to add some more whilst cooking or not if you want less oil.

This dish is quite dry and I like to eat it with the yoghurt and aubergine curry (posted on he blog) or a raita made with yoghurt and grated cumber and chopped mint leaves - cool and delicious.
