This is a delicious kebab recipe that is very versatile, it can be cooked on the barbecue, in the grill or baked in the oven.
Ingredients:
450g (1lb) boneless lamb cubes cut in to bite size pieces.
1 tsp ginger paste
1 tsp garlic paste
1 tsp chilli powder
1/2 tsp salt
2 tblsp malt vinegar
Juice of half a lemon
1 green pepper cut into cubes
1 large onion cut into cubes
3-4 tomatoes cut into cubes
oil for basting
6-8 skewers
Mix together the ginger, garlic, chilli powder, salt, vinegar and lemon juice.
Rub the mixture on the lamb and leave to marinate for a few hours.
Place the meat, peppers, onions and tomatoes on the skewers and baste with oil, grill or cook on a griddle pan.
The kebabs can be served with salad and chutney. Recipe for the chutney will follow in future blogs.
